This dish introduces sweet flavours to savoury (with the super sweet figs complimenting the moreish salty ham perfectly) and combines so many amazing textures it would be hard for it to fail. It’s simple and can be pre-prepared ahead of time allowing you more time to mingle with your guests.
We kicked off our Eurovision Dinner party with these bad boys but they wouldn’t be out of place at a summertime BBQ, a finger food buffet or simply served as a sumptuous lunch!
You will need;
2 dried apricots per guest
1 fig per guest
2 rashers of parma ham per guest
Balsamic glaze N.B. The balsamic glaze is a key ingredient to the dish as it works wonders with the ham.
Wash the figs and trim off the ends. Taking a single piece of parma ham wrap the fig entirely and place on a lined baking tray. Continue with all figs and chill until ready to cook.
It’s likely the apricots will already be slit from the stone removing process. Fill each little apricot with a nice helping of mozzarella then cut a slice of parma ham in half and wrap the apricot in it. N.B. 1 slice of ham will do 2 apricots. Then slide the 2 stuffed, wrapped apricots onto a cocktail stick and chill until ready to cook.
When ready place the dishes in the oven for 10-15 minutes until the parma ham is crispy.
Serve on a bed of rocket and drizzle with balsamic glaze.
