5 Minute Pizza

This dish couldn’t be any easier or quicker and is a good way to use up whatever is left in your fridge! Or you can buy some lush ingredients like we did : ) It’s also a good alternative to (and slightly more sophisticated than) a Dominoes when you have the girls over.

You will need:

Ready rolled puff pastry

Topping of your choice

As the pre-made pastry comes in two rectangles we made two delicious pizzas. Our first had no base but instead a layer of onions we had caramelised in a pan with some spinach which had now wilted. We then topped with generous amounts of goats cheese and even more spinach.

Our second had a base of tomato puree and some sun blushed tomatoes dotted around. We then added strips of prosciutto (or parma ham), mozzarella and lots of fresh basil. The salty prosciutto with the sweet tomato flavour is unbelievably satisfying.

Then all that is left is to pop the pizza in the oven for 10 minutes on about 200c or wait until the pastry is golden and the cheese is bubbling.

We couldn’t decide which one was our favourite! Give them a go and let us know which you prefer.
