Guacamole is the perfect accompaniment to a Mexican night, ideal for when you’re entertaining, and great for those times when you just fancy chips and dip.
2 Ripe avocados
2 Plum tomatoes
1 Red onion

The trick to making perfect guacamole is making sure that your avocados are ripe. To test, give them a little squeeze. If they have no give they’re not ripe enough – too much give and they are too rip (so really you’re looking for anything in-between). Assuming you’ve got the perfect avocados slice them in half, take out the stone and scoop the flesh from the peel into a bowl.
Using a fork, mash the avocado until it is a smooth texture. Next chop the tomatoes and onion into small chunks (small enough that they can both sit happily on a tortilla chip). Add to your mashed avocado.
Finally, grind in some salt for a little kick and squeeze in as much lime juice as your taste buds desire. Of course, the best way to get the flavour spot on is to do the taste test as you go. That way you can add a little more of whatever you think it needs.
